Stop Dumping Our Emissions on Poorer Countries
Here’s a quick, easy and delicious brownie recipe using lots of Fairtrade ingredients.
INGREDIENTS
- 2 tablespoons ground flaxseed
- 180-200g dark, Fairtrade chocolate, chopped
- 1/2 teaspoon Fairtrade coffee granules
- 80g margarine/butter
- 125g self-raising flour
- 70g ground almonds
- 50g Fairtrade cocoa powder
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 240g Fairtrade caster sugar
- 1 1/2 teaspoons Fairtrade vanilla extract
Heat your oven to 170OC. Line a 20 cm square tin.
Combine the flaxseed with 6 tablespoons of water and set aside for at least 5 minutes. Meanwhile, melt 120g of the chocolate and the margarine/butter in a saucepan with the coffee granules, plus 60ml water. Use a low heat. Allow to cool slightly.
Put the flour, almonds, cocoa, baking powder and 1/4 teaspoon salt in a bowl and stir to remove any lumps. Then, stir the sugar into the melted chocolate mix until it appears smooth and glossy. Add the flaxseed mix, vanilla and remaining chocolate to the chocolate mix. Then stir the flour mixture and combine. Spoon the mix into the tin.
Bake for 35-45 minutes until an inserted skewer comes out clean. Allow the brownies to cool in the tin completely (it’s hard, we know!) and then cut into squares.
